Welcome Back to Pinterest Tuesday!!

Love this salad...

    I found this recipe earlier this spring, immediately tried it. drum roll please.........Avocado/Tomato/Mozzarella Salad.  Soooo good...yes I know I am a dork and obsess over strange things.  This salad is so fresh, yummy and perfect for a hot summer day and as you all know Avocado is a SUPER food. 

       To make this wonderful god given salad you need:

                          2 Avocados, peeled and diced-largely (is largely a word oh well I'm using it)
                          2 Roma tomatoes, diced-largely
                          1 Ball FRESH mozzarella, diced-largely (FRESH is nonnegotiable-must have)
                          2 T. Olive Oil
                          2 t. fresh or dried basil
                          Salt & Pepper
                                   Stir all together lightly and serve immediately. 

My Mom and I made this last time I was in Kansas and we were immediately in LOVE.  Thank you the lovely ladies of Just a Spoonful .  I love their blog...follow them they have great recipes!!


On a different completely unrelated note.  Since we moved to Texas I have been job hunting to no avail.  However home girl got a job interview!!!! Yippee!!! I will keep you all informed.  Hopefully it will bring me good luck and I will soon to be employed!!

Fantastic (end of the week) Friday!

Hey Everyone!!




   I am thrilled it's the end of the week and the weekend is finally here! Mainly because I get to spend some time with T.  However I always want to do something "fun" on the weekends but I run out of ideas.  We take our lovely dogs to the lake often or swim in our pool but I want something new.  Anyone have ideas for a fun outing in the DFW area??

Terrific Tuesdays!!

Hey Everyone! I hope you all have had a wonderful last week and a great weekend. I have decided my blog needs a little direction.


I have decided that on Tuesdays I will review some recipes, crafts and other items from the oh so wonderful Pinterest.  Oh how I love Pinterest I waste  spend so much time on there and adore everything I find.  It helps me find dinner ideas, home decor ideas and also breakfast ideas for T's work.  Let me tell ya for a bunch of guys they can be kind of picky. Ok Ok Ok we will get started before I get distracted again...its pretty easy for me. 

The first recipe is a lovely breakfast dish I like to call Breakfast Enchiladas from a wonderful place known as Tasty Kitchen.  They boys love them and they are very requested minus the green onions.  T's boss does not like onions so I try to keep him happy for T's sake.  :) Anyway back to Breakfast Enchiladas.  These are so great for an early morning breakfast or overnight guests as they are all prepped the night before and all you have to do is pop them in the oven.  Part of which makes them so easy is the cubed ham as the meat.  You have to cook nothing before the whole operation goes in the oven.  I love cheese and these are definitely cheesy. 
             
        First:  Mix together Ham, Green Onions (if you are using them), 2 C. cheese. 
        Second:  Scoop this mixture out with 1/3 C into your tortillas.  Roll the tortilla up and lay it seam side down in your 9 x 13 baking dish.  The recipe states you can fit 10 of these into your dish but I tend to squish them together and fit 12 or so in there.
       Third:  Whisk together your 1/2 n 1/2 and eggs and pour over the tortillas in the baking dish and cover and refrigerate over night. 


        Fourth:  Sleepily wake up either because it is 5:00 am, you stayed up to late the night before with your wonderful guests, or it is just morning  and preheat your oven to 350 degrees and put your soon to be yummy breakfast in the oven for 30 to 40 minutes...i usually have mine in for closer to 40 minutes but I am not very patient in the morning to preheat well....oops! Add the remaining cheese and put back in for 10 more minutes. 
       Lastly:  ENJOY!!! We love these and they are still good reheated the next day.

I Workout!

     Oh Goodness...what a couple of days.  T and I have just started "Boot Camp" and is it rough.  Consisting of things I haven't done since high school like stairs...ugh but we have to carry medicine balls or kettle bells while doing them and oh the ab workouts they are putting us through.  I haven't been this sore since....well ever.  On top of me trying to train for the half marathon it is rough.  I have been so sore I have had a hard time running but I am still trying to plug through it. 
   
    Wish me luck as I return to boot camp today and hopefully running easier tomorrow morning!  Happy Day All!

Independence Day!!

I loved or 4th celebration.  It was pretty low key but we had a great time!  It all started Friday evening with a wonderful airshow and fireworks show.  We visited KaBoom Town in Addison, Tx.  We had never been to an airshow so it was a great 1st experience.  There for several WW II planes and F 16's flew over.  So fun and felt very patriotic.  They had several different groups playing throughout the evening.  We really enjoyed the symphony orchestra with all the big band marches and such.  We really felt the call to stand up in march.  Fortunately for the rest of the crowd we contained ourselves.  They had an amazing fireworks show choreographed to music.  The fireworks show was one of the best I have ever seemed and it was so fun to watch with a half a million other people.  That's right folks a half a million people ventured to Addison, Tx to this great event. 

Wednesday morning we slept in a bit and then ventured to the parade with our pooch friends.  We of course dressed them in Red and Blue bandanas to celebrate the day.  The parade was very fun and they had a car show throughout the day.  We enjoyed seeing the antique cars and such.  The miniature horses were a hit too.  The street fair was enjoyabe as well. 

The afternoon was spent relaxing in the pool...well not really relaxing the boys were having a great time throwing the football and tackling each other.  Yes I know it sounds as if they are 10 and 11 but in reality more like 23 and 24.  O well it was very fun.

We splurged and grilled yummy steaks and had potatoes and salad.  Very filling and oh so American!! Afterwards we headed out to yet another fireworks show.  Very fun and yet again very patriotic.

Newlyweds No More!


Well our 1st anniversary month is over and Yes I celebrated all month! When June 11 came around I couldn' believe that it had been a year!!


We had a very nice relaxed low key anniversary.  We had a wonderful dinner at a really fun restaurant and then came home and ate wedding cake which was soooo good.  I ate it everyday for the rest of the week.    I loved our wedding cake.  It was one of my favorite parts of our reception.


Now that our 1st year of marriage is over we are no longer newlyweds and now we are what?  We are happily married and enjoying the struggles and joys of marriage.  Happy Monday all!
