Terrific Tuesdays!!

Hey Everyone! I hope you all have had a wonderful last week and a great weekend. I have decided my blog needs a little direction.


I have decided that on Tuesdays I will review some recipes, crafts and other items from the oh so wonderful Pinterest.  Oh how I love Pinterest I waste  spend so much time on there and adore everything I find.  It helps me find dinner ideas, home decor ideas and also breakfast ideas for T's work.  Let me tell ya for a bunch of guys they can be kind of picky. Ok Ok Ok we will get started before I get distracted again...its pretty easy for me. 

The first recipe is a lovely breakfast dish I like to call Breakfast Enchiladas from a wonderful place known as Tasty Kitchen.  They boys love them and they are very requested minus the green onions.  T's boss does not like onions so I try to keep him happy for T's sake.  :) Anyway back to Breakfast Enchiladas.  These are so great for an early morning breakfast or overnight guests as they are all prepped the night before and all you have to do is pop them in the oven.  Part of which makes them so easy is the cubed ham as the meat.  You have to cook nothing before the whole operation goes in the oven.  I love cheese and these are definitely cheesy. 
             
        First:  Mix together Ham, Green Onions (if you are using them), 2 C. cheese. 
        Second:  Scoop this mixture out with 1/3 C into your tortillas.  Roll the tortilla up and lay it seam side down in your 9 x 13 baking dish.  The recipe states you can fit 10 of these into your dish but I tend to squish them together and fit 12 or so in there.
       Third:  Whisk together your 1/2 n 1/2 and eggs and pour over the tortillas in the baking dish and cover and refrigerate over night. 


        Fourth:  Sleepily wake up either because it is 5:00 am, you stayed up to late the night before with your wonderful guests, or it is just morning  and preheat your oven to 350 degrees and put your soon to be yummy breakfast in the oven for 30 to 40 minutes...i usually have mine in for closer to 40 minutes but I am not very patient in the morning to preheat well....oops! Add the remaining cheese and put back in for 10 more minutes. 
       Lastly:  ENJOY!!! We love these and they are still good reheated the next day.
